This is an extremely popular and delicious street food snack recipe made with urid dal fritters soaked in spicy creamy yogurt sauce. It is one of the popular street foods of North India and is often served as a dessert snack. There are a myriad of ways to make this yogurt snack, but this recipe is dedicated to a North Indian street-style variation. What are the ingredients of Dahi Bhalla?

Curd based snacks have always been my favorite recipe. It probably gives a soothing and satisfying feeling when served with a combination of spicy and salty snacks. Urad Dal Vada is one such salty and spicy snack, which becomes soft and tender when dipped in creamy and sweet curd. Having said that, even before dipping it in curd, I have dipped it in hot water so that it softens instantly and also removes excess oil. The same technique is followed in street style and hotels, which helps in making it even softer.

Another advantage of soaking in hot water is to speed up the softening process of the vada. For example, vada takes twice the time to soak in creamy curd and become soft because it is thicker than water. Soaking or serving creamy curd dipped in hot water is an ideal solution for Dahi Bhalla recipe . 

furthermore, I  would like to add some more additional tips, suggestions and variations to dahi vada recipe . firstly, for street style variant i would recommend preparing round or ball shaped vada. A  doughnut Don’ts bother making V-shaped vadas as it doesn’t really help the taste. Secondly, if you feel that you are not able to shape the vada into a ball with your fingers, then you can use a round spoon.

You may sometimes have to dip it in water and clean it before further use so that the batter can easily slide into the hot oil. finally, I have served it directly with creamy, spicy and sweet curd after dipping it in hot water. I have not specifically soaked it in curd but there is no harm in doing so. But this is not required as it becomes super soft after soaking in warm water.

How to make Vada for Dahi Bhalla:

  1. First of all, soak 1 cup urad dal for 5 hours.
  2. Drain the water and transfer to the mixer. also, add 1 chilli and 1 inch ginger.
  3. Add water as required and blend into a smooth paste. Try to add minimal water to prevent the batter from becoming watery . What are the ingredients of Dahi Bhalla?
  4. Transfer the urad dal batter to a large bowl.
  5. Take ¼ cup soaked (2 hours) moong dal in blender.
  6. Blend into smooth paste and transfer to the bowl of urad dal batter.
  7. Now add 1 tsp salt and mix well.
  8. Prepare a thick batter. If the batter is watery then add one tablespoon rice flour.
  9. Now using a wet spoon or hands, drop a spoonful of batter into the hot oil.
  10. Keep the flame on medium, stir occasionally.
  11. Fry until the vada turns golden brown and crisp.
  12. Drain the vada on kitchen paper to remove excess oil.
  13. Now take 5 cups of hot water in a big bowl.
  14. Mix ½ tsp salt and ¼ tsp hing. Mix well and make sure it is well combined.
  15. Now put the hot fried vada in water and submerge it completely.
  16. Soak for 30 minutes or until the vada absorbs the water.
  17. After 30 minutes, squeeze out the water and transfer to a plate.

How to prepare sweet curd for dahi vada recipe:

  1. First of all, take 2 cups curd, 2 tbsp sugar and ½ tsp salt.
  2. Whisk and mix well making sure everything is well combined.

How to assemble Dahi Bhalla:

  1. First of all pour sweet curd on the vada.
  2. Also add green chutney and a generous amount of tamarind chutney.
  3. Sprinkle chilli powder, cumin powder, chaat masala.
  4. Top with boondi and coriander leaves.
  5. finally,  enjoy chilled dahi vada or dahi Bhalla.

MATERIAL

FOR VADA:

  • 2 teaspoon urad dal
  • ¼ cup moong dal
  • chilli
  •  3 inch ginger
  • 2 chamach salt
  • Oil (for frying)

FOR SOAKING:

  • cups hot water
  • ½ tsp salt
  • ¼ tbsp hing

FOR SWEET CURD:

  • 3 cups curd (fresh and thick)
  • tbsp sugar
  • ½ tsp salt

FOR SERVING:

  • green chutney
  • Tamarind Chutney
  • chili powder
  • cumin powder
  • Spice
  • Bundi
  • Coriander leaves (finely chopped)

Notes:

  • firstly, soaking the vada in hot water helps in reducing oil and also makes the vada soft and juicy.
  • If you have enough time, soak the vada in curd for at least 2 hours before serving.
  • Also, make sure to use fresh curd. Otherwise you may have to add more sugar.
